What is panjeeri, and why it belongs in your winter routine

If you grew up in Pakistan, panjeeri probably needs no introduction — it is what appeared in
the kitchen when the weather turned, and what was pressed on new mothers and growing children by
every grandmother in the family. If it is new to you, here is the short version.

What it is

Panjeeri is a roasted mixture of wholewheat flour, dry fruits and nuts, bound with desi ghee.
It is eaten by the spoon, stirred into warm milk, or simply kept in a jar and dipped into. It is
dense, warming and very high in energy for its volume — which is exactly why it is a winter food
and a recovery food.
